Father's Day

Ini adalah order yang aku dapat untuk Father's Day. First order was from Kak Faizah of Johor (again,TQVM!) . She ordered a chocolate moist cake with freshcream and ganache topping....wah...very rich gitu.....and she also ordered Nasi Goreng and Ayam Goreng Madu utk 20 orang. Terima kasih Kak Faizah....sebab sudi tempah dengan saya.





Second order was from a friend, Jun...my neighbour. Jun kata nak kelainan so she asked for cupcakes to surprise her husband and kids too. Chocolate Moist Cupcakes with a combination of buttercream and ganache topping



Dan ini pulak Cotton Soft Cheese cake special for the family man, my husband. My husband memang suka cheesecake and actually dah lama dia request suh buat this cheesecake....so cheesecake it is. Hope you like it Yang ....

Roti Campak2





Hahaha..actually roti ni tader nama. Sebab apa di beri nama roti campak? sebab aku main campak je bahan2 suka2 hati campor itu ini. Nak bagi resepi pon alahai.......malam tu la..anak2 nak makan cheese and nak makan ngan roti tapi roti tader. Kalau roti takder apa susah...kita buat la roti kan? wahahaha...mood tengah rajin boleh la.....acu cuba try test mood tak berapa rajin.....hahahhaa....nasib ler.

So...masa nak buat ni memang tak der resepi khas....sumer main2 masuk jer...aku tengok ada tepung pau..aku buh tepung pau....campor ngan tepung gandum biasa jer..pastu tengok plak ada tepung chapati...aku bubuh jugak.....hahaha....buh yis..gula ..garam...susu cair...pastu nak buh la telur...tengok2 stok telur sudah habis......aiseh...cemaner nih....alih2 tengok ada putih telur ....hari try wat Portuguese Egg Tart...pakai egg yolk jer..so simpan ajelah putih telur.....so.....aku pom buh ajela putih telur....uli2......gedebak gedebuk.....siap ! Anak2 makan ngan cheese jer...suka betul.....makan roti panas2....memang la sedap.

Order From Johor

Mula2 terkejut jugak saya dapat order dari Kak Faizah sebab dia dok Johor. Ingatkan dia tersilap..rupa2 nya tak...dia nak wat surprise untuk family dia kat Keningau ni....Kak Faizah telah order Karipap Frozen sebanyak 100biji dan Nasi Ayam untuk 15 orang. Dah siap2 sumer kami pon hantar ke rumah family dia not very far from my house. Rupa2 nya Kak Faizah ni anak cikgu Fauzi....super super senior cikgu kat Keningau ni....alah...kami memang dok pegi sokmo la rumah cikgu Fauzi nih sebab Cikgu Fauzi and his family memang suka sangat menjamu2 makan.....dalam setahun mesti 3,4 kali jugak la kami di jemput.

Masa mula2 hantar nasi ayam tu...my husband kata semua orang macam terpinga2 and heran...kenapa la pulak...so baru la my husband bukak cerita....ni hadiah dari orang Johor,baik sungguh Kak Faizah..sanggup order dari Johor nun untuk wat surpirse kat family...untuk Kak Faizah...terima kasih sebab sudi order dan percaya dengan saya. Lepas2 ni leh la order selalu..! Hehehe...

Brownie again...

Hehehe...sejak2 dah pandai wat brownies ni..suka pulak buat....pasal senang jer, tak yah pakai mixer..sumer main campor2 jer....macam wat cekodok. Aynway...semalam wat lagi brownies utk SMK Bingkor.....kalau sapa2 teringin nak order brownies dengan saya pon bulih..don't hesitate..just give me call, okay !

Kelas Cream Puff & Eclaires

My first cream puff and eclaires class telah berjalan dengan lancar. A friend of mine, Kak ton yang attend kelas ni. Mula2 aku plan nak wat petang but since Kak Ton ada hal la pulak ...so kelas di awalkan pada waktu pagi......Kak Ton siap bawak camcorder lagik taw..hehehe....

Classic Italian Pizza




Made this pizaa last week. My kids' favourite ! Kalau ada left over leh simpan and wat brekfes besok pagi....


Pizza


Doh.

Bahan2:

150g tepung gandum
150g tepung pau
2 1/2 sudu kecil instant yeast (yis segera)
secubit garam
1 sudu besar gula
2 sudu besar minyak zaitun
1 cawan air (250ml)


Topping:

1 botol sos spaghetti segera
parutan mozarella cheese
parmesan cheese (optional)
hirisan sosej atau pepperoni
isi ayam, nenas, bawang, capsicum,
serta apa2 topping yg anda suka


Cara2:
- masukkan semua bahan2 kering di dalam mangkuk ,gaul2 biar rata. Kemudian buatkan satu lubang di tengah.
- masukkan air di lubang tadi dan minyak zaitun, gaul2 sebati dgn tepung hingga licin dan tidak melekat di tangan. (Jika masih melekat2, cuma celup2 kan tangan dalam tepung dan uli lagi).
-adunan sepatutnyer terasa lembut dan elastik.
-tutup bekas berisi adunan pizza tadi dan biarkan doh kembang dua kali ganda, kira2 30 minit.

-setelah doh dah mengembang, tumbuk2 doh utk keluarkan angin dan uli2 lagi hingga licin.
- bahagi kan adunan kepada 3 bahagian dan uli setiap bahagian menjadi bebola.
- ambil satu bahagian, canaikan hingga leper dan letakkan di atas loyang pembakar yg sudah di di gris dengan minyak/butter/marjerin. Setiap kepingan pizza biarla sederhana tebal supaya rasa doh dan topping nyer seimbang.
- sementara itu panaskan oven pada suhu 180'C
- sudukan kira2 3 sudu besar soso spaghetti ke atas doh, sapu rata
-taburkan pula parutan mozzarella cheese dan parmesan cheese
-letakkan pula topping pilihan anda seperti sosej, isi ayam, bawang, capsicum, nenas, apa2 topping yg anda suka hingga menutupi seluruh permukaan pizza.
- dan tabur lagi parutan mozzarella cheese hingga rata ,the more the cheese, the tastier...hhehehe.

-kemudian bakar la di dalam oven kira2 20-25 minit, atau sehingga cheese mencair dan agak garing. (sila guna api atas dan bawah ketika membakar).

Chocolate Brownies

Hmm...resepi ni di tepek dengan kadar segera di atas permintaan Puan Siti Nor Baiyah kita yang tengah berehat di rumah sebab di serang chicken pox....aduhai...sian kat awok.....tak per,nanti dah sihat awak leh wat la brownies ni yer......took this recipe from here tapi dah di ejas2 sikit mengikut lidah saya....hehehe.






Brownies


Bahan2:

125g cooking chocolate (chopped)
100g butter ( chopped)


2 sudu besar serbuk koko
170g (3/4 cawan) gula
1 sudu kecil vanilla extract
3 biji telur
3/4 cawan tepung gandum (kira2 95g)
secubit garam- I ommit this since I was using salted butter

1/2 cawan coklat chips yg di gaul bersama tepung gandum(optional)

Cara2

-panaskan oven pada suhu 170'C selama 10 minit

-masukkan coklat masakan dan butter yg sudah di cincang ke dalam mangkuk kaca, dan panaskan di dalam microwave oven pada suhu Medium selama 4 minit ( ataupun cairkan secara double boil, iaitu...mangkuk kaca di letakkan ke atas periuk yg berisi air menggelegak dan biarkan coklat dan butter mencair)

- setelah itu, masukkan gula dan serbuk koko dan esen vanilla ..kacau2 biar rata dgn menggunakan spatula atau whisker atau senduk kayu sahaja.

- kemudian pecahkan dan masukkan telur sebiji-sebiji..sambil mengacau...

-selepas itu masukkan pula tepung dan coklat cip.

- tuang ke dalam loyang pembakar yg sudah di lapik dengan kertas serta di gris, dan bakar di dalam oven selama 30 minit, atau pun sehingga masak (cucuk brownies dengan lidi satay dan jika ada sedikit adunan tepung melekat di hujung lidi, maknanya brownies sudah siap. Jangan terlebih masak)

- ketika brownies masih panas, potong brownies dalam bentuk empat segi tepat dengan tanpa mengeluarkan ia dari loyang. Biarkan borwnies menyejuk sebelum menikmati nyer.

note: permukaan brownies sepatutnyer agak mengeras apabila sudah menyejuk pada suhu bilik manakala the flesh is still moist and yummy !! This is how a brownie should look and taste like.

Mexican Bun


Dah lama dah nak cube buat roti ni...and memang selalu tengok banyak di jual kat Tesco..Giant..tp tak pernah terfikir nak beli pon walaupon bau freshly baked buns ni sungguh memanggil2. Until la....err..bila yer....ntah...a couple weeks ago kot..baru la I was ready and have the courage to bake these buns.

Being me...every time I want try new recipes I would search for various versions of it. Then I would choose the most simplest and proven delicious one. Or I would combine more than one recipes into one recipe.Hehehe....For this Mexican Bun recipe...I was having hard time to recall which recipes that I took...but I guess it was this one ..CnP from Mamafami..hehehe





Mexican Bun



For the Filling
Ingredients :
100g salted butter ~ softened

1/4 teaspoon vanilla essence

35 g brown sugar


Method :
1. Beat butter with an electric mixer on medium speed using the paddle attachment for three minutes. (I beat by the hand)

2. Add in vanilla essence and brown sugar. Beat till creamy.
3. Refrigerate the mixture until firm.
4. Divide mixture into 20g portion ball. Keep refrigerated until ready to use. (I just divide the mixture according to how many doughs I managed to get)




Topping
Ingredients :

65 g butter ~ softened
55 g icing sugar ~ sifted
1 Grade A egg ~ lightly beaten

1/3 teaspoon coffee flavouring (available from bakery supplies shop) **or you can use 1 1/2 teaspoons instant coffee dissolved in 3/4 teaspoon water

A pinch of ground cinnamon can be added to the coffee flavouring for extra flavour (I omit this)
65 g low protein (high ratio) flour ~ sifted

Method :
1. Beat butter and icing sugar using an electric mixer with the paddle attach
ment on medium speed for 5 minutes until mixture is light and fluffy. (I beat by the hand).
2. Gradually beat in egg.
3. Add in coffee flavouring.
4. Sift flour into mixture and mix on low speed until combined.
5. Refrigerate until ready to use.


Sweet Dough

Ingredients :
250 g high protein flour ~ sifted (I used pau flour)
2.5 g bread improver ~ sifted (I didn't use it)
2.5 g bread softener (neither this too)
10 g milk powder ~ sifted
38 g caster sugar (I used regular sugar)
1/2 teaspoon salt
1 teaspoon instant yeast
1 egg ~ lightly beaten
135 g water or milk (do not use milk powder if using milk)
30 g butter ~ softened ( I used shortening)

Method :
1. Mix sifted flour, bread improver, bread softener, milk powder, sugar, salt, instant yeast and egg in a mixer bowl.
2. make a well in the middle and add the liquid, mix everything together.
3. Add in the butter and pour the balance liquid if needed. Knead till dough is soft, smooth and elastic (not sticky).
4. Divide dough into 55 g portions. You should get about 9 portions.
5. Roll each portion into a ball. Cover the balls of dough and leave to rest for 10 minutes.
6. Flatten the dough and place a portion of filling in the center of the dough.
7. Gather the edge and pinch to seal. Make sure to seal well or the filling will leak out during baking.
8. Place on a greased baking tray. Repeat with remaining portions of dough. Place each bun about 7.5 cm apart on the baking tray.
9. Prove for 45 minutes in a warm place or until doubled the size.
10. Pipe the topping on the buns in a spiral, starting from the centre.
11. Bake in a pre-heated oven at 170 C for 12 - 15 minutes or until bun are lightly brown.

Note :
Amount of liquid used may vary depends on the flour you used.
