Cupcakes craze !



The baking mood is still there...especially cupcakes! These are the cakes I baked yesterday. Aren't they lovely ? Sweet to your eyes....even sweeter to your mouth. But I still have a lot to learn when it comes to decorating the cuppies. I don't attend any classes and I learn it all from the internet and I've improved my self. Not equipped with proper tools and instruments is not an excuse for me to expand my interest. In fact, it makes me to be more creative. Before I had my oven, I tried cake recipes that only required me to steam and I still prefer steamed chocolate cakes ! Before, I never knew what is whipped cream..what is piping jelly...what is creamwell and all the baking stuffs. Really ! And now all the stuff are important ingredients that you can surely find in my kitchen.I never thought I would say this.....I enjoy cooking..baking...being in the kitchen and trying new recipes. And I'm proud of myself, hehehe.

Custard cupcakes

I'm in the mood of baking lately. I have list2 of cakes to be experimented and this is one of them. I haven't tried it yet by I've always believed that simple recipes always promise an excellent outcome(updated:I've tried it and as I expected it's yummy...!). Taken from Dr. Ezura's.






Custard Cupcakes

1 cup butter

1 cup sugar

4 eggs
1 tsp vanilla essence


Sift together:
1 cup all purpose flour
1 cup custard powder
1 tsp baking powder
1 tsp soda bicarbonate


Method:

-beat butter and sugar until fluffy

-beat in eggs one by one.

-add dry ingredients that have been sifted together

-mix in vanilla essence

-scoop into prepared muffin tin

-bake 20-25minutes in a preheated oven 175 degrees C.




Topped with cream cheese buttercream

My Vanilla Cupcakes


I've noticed that cupcakes is a new trend lately. Everybody is crazy about cupcakes and t hey are even sold online ! And I'm not excluded...hehehe. I have been thinking of baking my own cuppies. This cuppies things are really conquering my mind since because I think about it all the time. Even when I was breastfeeding Aina I kept thinking of all the patterns and designs that I'd like to put on my cupcakes if I ever baked them. So at last my cupcakes project are finally ON. These are my vanilla cupcakes with buttercream frosting.







Vanilla Cupcakes


Ingredients :

  • 1 1/2 cawan tepung naik sendiri (self raising flour) - if tader boleh guner tepung biasa dan campur dgn 1 sudu kecil baking powder
  • 1 1/4 cawan tepung gandum (all purpose flour)
  • 1 cawan (2 sticks) butter-suhu bilik
  • 2 cawan gula (sugar)
  • 4 telur saiz A (eggs)
  • 1 cawan susu segar (fresh milk ,but I used evaporated milk - susu cair)
  • 1 sudu teh esen vanilla

Method :

  1. Panaskan oven pada suhu 180'C
  2. campurkan kedua2 tepung, ayak dan ketepikan.
  3. pukul butter bersama gula hingga gebu,kemudian masukkan telur sebiji2.
  4. masukkan esen – pukul – akhir baru masukkan tepung berselang seli dengan susu.
  5. masukkan dalam cawan kertas n bakar selama 20 minit pada suhu– 180'C
note : kek lebih gebu jika menggunakan tepung superfine


BUTTERCREAM


Ingredients :

250 krimwell
150 Shortening

1 table spoon full of milk (fresh or evaporated milk)

150 gula icing – ayak dulu

1 sudu t’eh esen almond/perisa oren – optional ajee


Method :

-pukul kriwell + shortening = pukul hingga gebu

- and then masukkan gula dan pukul lagi sehingga gebu.

- dan boleh la di campur dengan warna2 yg anda suker.

Chapatti




You must have..
Atta flour
Ghee(minyak sapi) Butter or Margerin . Ghee lebih sedap for those in Malaysia, QBB is the best.
Minyak masak
Water
Salt(optional)

Method:
Place atta in a bowl.
Rub in a tablespoon of fat.
Add water bit by bit until it becomes a dough. The best is bila dough tak lagi lekat pada tangan.
Add about one tbs of cooking oil, and uli dough sehingga minyak sebati.

The bread taste better if made few hours ahead. make as many small balls as u can, as big as golf ball, flatten it and roll out.

A flat, non stick pan should be used if you don´t have 'tawa'

Heat the pan, mesti betul betul panas.

Before putting bread on pan, remove excessive flour( tepung yg berlebihan.)

Place it on pan.
When you see collur difference on the bread, color tukar ke gelap sikit. turn over the other side.
Dgn Perlahan tekan sides of the bread dgn kitchen paper atau kain. Tunggu hingga puffs up and lepas itu turn over to cook the first side.
Bila dah siap semua,

Letakan sedikit minyak sapi atau butter atau margerine on one piece of bread and take another one sandwich iand rub it together.



Serve with dhall, any type of curries, achar or simply have it plain with ' Chai'

I have a confession to make....I LOVE CHEESECAKES ! and since now I know how to make good, delicious, creamy and yummy cheesecakes I want to make 'em everyday! Owh.....gumuks la sayer kalau makan cheesecake hari2. But really.....I can finish the whole 9'' cheesecake all by myself and that's not good.....not good for my health. To those who have been thinking of trying a cheesecake recipe I highly recommend you to try this recipe. The ingredients are simple and easy to find and it's easy to make too. You can serve it with blueberry , topped 'em with whipped cream,drizzle with chocolate or just have it as it is ! Any way you like it....it's delicious. I think once you've tried this recipe, you'll never need to visit Secret Recipe anymore...oops! Hehehe...
